Granola Bars

There are lots of homemade granola bar recipes out there that look terrific, but honestly, this is the only one I've tried. The bars are extremely low-fat (depending on your add-ins, of course) and made with healthy ingredients found right in your pantry. My toddler and preschooler devour these bars for breakfast, snack, dessert...anytime!

Chewy Granola Bars (from Miserly Meals: Healthy, Tasty Recipes Under 75¢ per Serving by Jonni McCoy)

1 c. old-fashioned oats
½ c. whole wheat flour
½ c. brown sugar, firmly packed
¼ tsp. baking soda
¼ tsp. baking powder
½ tsp. cinnamon
¼ tsp. nutmeg
½ tsp. salt
½ tsp. vanilla
¼ c. honey

Combine oats, flour, brown sugar, baking soda, baking powder, cinnamon, nutmeg and salt in a bowl and mix.
Add the vanilla and honey and mix well.
Press the mix evenly into a greased 8x8 pan.
Bake at 325 degrees for 18-20 minutes or until golden brown. Before cutting, cool completely.
(Can add 1 cup of the following when you add the honey: chocolate chips, nuts, or dried fruit).

  4. I'm so making these today! I've been wanting to make some granola bars for a while now. Thanks for sharing!

Do you put nuts in it? I still tend to stay away from them in stuff my little ones eat because I'm worried about them not chewing them up good or choking on them. Just curious if you use them and how your kids do with them.

  5. Sarah: I've never put nuts in them but they would be super tasty with them. My kids (18 mos. and 3 yrs.) do pretty well with nuts, though (they like them as a snack) so I don't think it would be a problem with them. Maybe some semi-crushed cashew or something? Yummy!
