Need help with lunchtime!

So my daughter has been big into her "picnic lunch" this summer. We usually pack a lunch and eat it at a park or in our backyard. However, on the not-so-nice days, we find ourselves stuck inside with a mommy standing in her pantry, staring blankly at the shelves and wondering, "What to make today?"

I give in every so often and make Mac'n'Cheese from the box or Spaghettios (a very occasional treat in this house) but would really like to steer clear from processed foods. So Please Help Me!!

I'm looking for quick, yummy, healthy, toddler/preschooler friendly lunch ideas and recipes. Do you have a staple lunch item for your little one? Do you freezer-cook and make your yummies ahead of time? Any help is appreciated! Please leave me a comment and/or a link to your great (and much-needed) lunch inspiration!

  1. I can completely relate! Lately, I have been mixing wraps into our lunch menu - I use FlatOuts (buy in bulk from Costco) with a little MW, sliced cheese, ham or turkey and a piece of lettuce. Roll it up, secure with a "fancy" toothpick and Voila, something other than a sandwich! There are tons of great ideas on their website: flatoutbread.com Good luck!

  2. Melissa: thanks so much for the wrap idea! I actually just got my Costco membership card in the mail two days ago and can't wait to go try it out (never been!) when I don't have the kiddos w/ me. I'll definitely check out those wraps. My kids would love the toothpick, too. :-)

  3. We do the wrap thing too, but we put a pickle spear in the middle and wrap it up. MMM! And only 3 points (weight watchers). Serve it with the "white stuff" as my kids say (cottage cheese). My kids like "breakfast" for lunch too. Like scrambled eggs and french toast sticks ... that's easy!

  4. This is kinda processed, but my kids make "Homemade Lunchables" - whatever crackers we have, whatever meat, whatever cheese. They are picky about having the exact number of each thing :0) We also love frozen blueberries.

  5. Gin: my kids love pickles so I'll definitely have to try that in a wrap. Annette: I should've posted that I don't consider crackers and sandwich meat to be processed. If comes prepacked in a box with a packet of mix, I'll call it processed. Otherwise, I couldn't survive w/out crackers and sand. meat!
